What would "Love of my heart" be?
In know its gra mo chroi in Irish Gaelic but what would it be in Gàidhlig?

I'd say "Gaol mo chridhe" unless you were addressing him/her, in which case it would be "A ghaoil mo chridhe." You could also say "Eudail mo chridhe," which means basically the same thing.
