Thanks so much for that. I have a further question if that is ok.
I understand that Cha dìochuimhnich mi a-chaoidh means 'i will never forget him'......i think i understand that dìochuimhnich means forget and that chaoidh means never. Which part refers to the masculine subject? So how would I change the phrase to say just 'I will never forget'?

No, it just means 'I will never forget'.
You may have seen
Cha dìochuimhnich mi e a-chaidh: the 'e' is 'him'.
There is also a variation 'chaoidh', meaning the same as 'a-chaoidh', and you also see it without the hyphen.

This is even as an example in Mark Colin's dictionary - I don't understand, however, why it isn't lenited to
"cha dhìochuimhnich". Can anyone tell me?

It tends to be verbs beginning with the letter "f" that are lenited in the negative future tense.
Chan fhaigh mi a leithid a-chaoidh! for example.

Traditionally, the future negative (Cha/chan) doesn't lenite the
'dts' group.
Think of 'cha' as 'chan', with the final 'n' blocking lenition of these consonants.
Cha dèan...
Cha tig...
Cha seas...
With f+noun, you get Chan fh..: chan fhàg...
BUT
as TAIC says, there is a tendency to lenite anything and everything now, so
will find cha dh/sh/th).
