Bha i grianach DiDòmhnaich, ach tha i fuar a-rithist.
It was sunny on Sunday, but it's cold again.
Can't you use both? I know the weather is femine, but if you're speaking of the day then that's masculine.

Bha i fuar - It (the weather) was cold.
Bha e fuar - It (The day) was cold.

I guess that would be possible, depending on what you mean in the current context. But I think usually you would mean the weather, not the day.
Tha e grianach is tioram an-diugh
would then imply "The day is sunny and dry today", which is a bit awkward IMHO.

Ceart gu leòr:OK :)
I think "i" is more commonly used, but i'm pretty sure it's acceptable to use "e" in context with the weather.

Co-dhiù:anyway

Tha i grianach, ach caran fuar an-seo.
It's sunny, but a wee bit cold here

Tha a' ghrian ann an-seo cuideachd mu dheireadh thall.
The sun is here too, finally.

Bha i ro theth an-seo an-de. Bha e 90 ceum (degrees ?) Fahrenheit anns an fheasgair. Chan eil fhios agam mar a tha e ann an centigrade. Mar is abhaist, chan eil e cho teth as t-fhogar an-seo.

Yesterday it was too hot here. It was 90 degrees F in the afternoon. I don't know what it is in centigrade. Usually it isn't so hot here in the fall.

Tha i fuaraich a-rithist an-diugh agus beagan sgòthach, ach tha mi sealbhachadh.
It's cool again today and a little cloudy, but I'm enjoying it.

Edit for correctness: Tha i fionnar a-rithist an-diugh agus beagan sgòthach, ach tha mi ga mealtainn.

Bu mhath leam "fionnar" a mholadh airson "cool"? 'S e gnìomhair a th' ann am "fuaraich".

May I suggest "fionnar" for "cool"? "Fuaraich" is a verb.

Cuideachd, 's iomadh fhacail is abairt a tha ann airson "enjoy" a chur an céill. Mholainn-sa "meal" (m.e. tha mi ga mealtainn), seach "sealbhachadh" leis gu bheileas a' cleachdadh "sealbhachadh" nuair 's ann le cuideigin a tha rud. Chan ann leinn a tha an t-síde, an ann?

There are also many words and expressions for expressing "enjoy". I would suggest "meal" (eg. tha mi ga mealtainn), rather than "sealbhachadh", as "sealbhachadh" is used when someone is in possession of something.
We don't own the weather, do we?

'S e "córd ri" abairt eile is tric a chleachdas ri "enjoy". Mar eisimpleir, "Tha i a' córdadh rium." no "Tha i gam chórdadh". Tha an dá abairt sin ceart.

"Córd ri" is another expression often employed for "enjoy". For example, "THa i a' córdadh rium" or "Tha i gam chórdadh." Both of those are correct.

Tapadh leibh!

I wasn't 100% on which words I should be using, but context is everything ;)
Thanks again.

'S e do bheatha.

Sealbhachadh is used for "enjoy" in some contexts, but it seems to be for high register and connected to possession. I'll try and find out in more detail and post it later. I've never heard it used for this sort of "enjoy".

Tha i sgòthach a' mhadainn an diugh, le corra fhras ann.

It's cloudy this morning with an occasional shower.

It's windy here.

Chan eil i gaothach an seo a-nis. Bha an t-uisge ann a-raoir. Tha i grianach a-nis, ach than an talamh fliuch fhathast.

It isn't windy here now. It rained last night. It is sunny now, but the ground is wet.
