'in the' anns an vs sa/san

As I once again take up Gaelic, I notice that one source uses ann an/ anns an for 'in the' and another gives me sa/san.

Are these both right, and if so is there a difference in when you use one form vs the other?

I did some looking--sa/san is the contraction for anns an, is that correct?

They're all correct, sa(n) is indeed a short form of anns an but neither is considered excessively colloquial i.e. you can use sa(n) in an essay just the same as anns an. The only variant considered a bit colloquial is a's an.

I assume you mean to type "anns a'/anns an"...? "ann an" is just "in" or "in a".
