Why and how do Gaelic names change?

Hallo - 'S mise Scott!

I have recently picked up the "Teach yourself - Complete Gaelic" book and I'm totally stumped with the first piece of dialogue.

It mentions a chap called "Tormod" but in the actual conversation the spelling seems to change to "Thormoid".
Similarly, it mentions a girl called "Mairead" which becomes "Mhairead" in the dialogue.

Can anyone please tell me why this is?

Gaelic has a case system for the nouns - in English, this is pretty much gone, but you can still see it in "I, me, my".
