I'm a beginner in the language as well. I've not had such an opportunity to use the words of love in Gàidhlig, but from my basics..

Tha goal agam ort - I love you.
Tha gràdh agam dhut - I love you again, but I think it's more formal? Literally something like 'Love is at me, to you'.

(1) The correct spelling is gaol.

(2) AFAICT, gràdh is also used with the preposition air (roughly = on) and its derivates, so it would be tha gràdh agam ort as well.

(3) Apparently you're right, Colin Mark's dictionary says this:

note also that gaol is more intimate than gràdh and is usually reserved for romantic contexts, or particularly close family relationships
